There’s a cover of The Scientist that was on the Wicker Park soundtrack (random movie, good soundtrack) by Johnette Napolitano & Danny Lohner that I prefer to the Coldplay version for the same reasons — acoustic guitar, less-polished vocals, overall less-produced. Just let’s the songwriting shine through.
